SWEET POTATO CASSEROLE

1 32 oz can Yams (drained)
1 stick Margarine
1 cup Chopped Pecans (optional)
2 tablespoons Dark Brown Sugar
1 cup Mini-Marshmellows

Combine all ingredients except marshmellows using electric mixer until well blended. Pour into aluminum baking pan 13x2x9 top with marshmellows (cover completely) Bake at 350 until marshmellows golden brown.

OLD FASHIONED SOUTHERN TEA CAKES

2 1/2 c. sifted plain flour
1/4 tsp. salt
2 tsp. baking powder
1/2 c. butter
1 c. sugar
2 eggs, beaten
1/2 tsp. vanilla
1 tbsp. milk
1 cup Mini-Marshmellows

Sift flour, salt, baking powder together. Cream butter, sugar, eggs together. Add vanilla, milk and dry ingredients. Blend well. Place dough on lightly floured board, sprinkle flour over dough and roll to 1/2 inch thick. Cut with cookie cutter. Place on cookie sheet. Bake at 350 degrees to 375 degrees for 12 to 15 minutes.

GREAT CHICKEN & DRESSING

4 Boneless Chicken Breasts
Salt and Pepper to taste
3 Cans Cream of Chicken Soup
1 Can Cream of Celery Soup
1 Can Cream of Mushroom Soup
1 Large (10 inch) Pan Corn Bread Crumbed
1 Large Onion Chopped
2 Eggs
Sage to Taste

Boil Chicken until very tender in enough water with *salt and *pepper to make 4 cups stock. Remove cooked chicken breasts from stock (remove skin if not skinless) and tear into small pieces (removing bone, gristle, etc) Mix all ingredients except stock and sage in large bowl, stir. Add stock in increments and stir until desired consistency achieved, add sage to taste, mix well. Pour into 2 '4x4' square pans and bake in 350 oven for about 30 to 45 minutes

PEACH DELIGHT (Using Buttermilk)

1 lg. can sliced peaches
2 c. buttermilk
1/2 c. pecans (chopped)
1 lg. box peach Jello
1 lg. box Cool Whip

Bring peaches to full boil. Mix in Jello. Stir until completely dissolved. Cool. Add buttermilk. Fold in Cool Whip.
Chill and serve.

PEACH DELIGHT (Using Sour Cream)

1 lg. can sliced peaches
2 c. buttermilk
1/2 c. pecans (chopped)
1 lg. box peach Jello
1 lg. box Cool Whip

Bring peaches to full boil. Mix in Jello. Stir until completely dissolved. Cool. Add sour cream. Fold in Cool Whip.
Chill and serve.
